Chili Lime Chickpeas with Fajita Vegetables

Ingredients

  • 2 cans chickpeas
  • 1 medium onion
  • 3 bell peppers, any colors
  • 2 tsp chili lime seasoning
  • Zest of one lime
  • 1-2 tbsp soy sauce

Preparation

  1. Preheat oven to 400F.

  2. In a bowl, add chickpeas, 1 tbsp soy sauce, and 1 tsp chili lime seasoning. Toss to coat completely.

  3. Add more chili lime seasoning if needed.

  4. Repeat the process with peppers and onions using the remaining soy sauce and seasoning.

  5. Place chickpeas on one lined baking tray and veggies on a separate tray.

  6. Place both in the oven.

  7. Cook veggies for 15 minutes or until slightly browned, then remove from oven.

  8. Stir chickpeas and cook for an additional 15 minutes.

  9. Remove from oven and allow chickpeas to cool.

  10. Add extra fresh lime zest over the top.

  11. This recipe is perfect for meal prepping and makes 3-4 servings.

  12. Pair with grains, healthy fats, and extra greens as desired.
