Easy Grinder Salad Sandwiches

Ingredients

  • Hoagie Rolls
  • Ham
  • Salami
  • Pepperoni
  • Provolone
  • 1/2 cup mayonnaise
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon salt and pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1/2 teaspoon red pepper flakes
  • 1/3 cup pepperoncini peppers or banana peppers, drained
  • 1/3 cup shredded Parmesan cheese
  • 8 ounces shredded iceberg lettuce
  • 1/2 red onion, thinly sliced
  • Sliced tomato

Preparation

  1. Preheat oven to 400 degrees F. Lay out bread and top with lunch meat of your choice.

  2. Use as much or as little meat on the sandwiches as you like. Top with a couple of slices of provolone cheese. Bake for a few minutes until the cheese is melted.

  3. In a large bowl, mix together mayonnaise, red wine vinegar, salt, oregano, Italian seasoning, garlic powder, and red pepper flakes. Stir well.

  4. Add pepperoncini peppers or banana pepper rings, 1/3 cup Parmesan cheese, 1/2 a sliced red onion, and shredded lettuce. Stir everything together well.

  5. Once the cheese is melted and the sandwiches are hot, top them with more Parmesan cheese. Add slices of tomato that have been seasoned with salt and pepper. Top sandwiches with the grinder salad mixture.
