Vegan Chickpea Tuna Salad
Ingredients
- 1 tin of chickpeas
- 1/2 red pepper, chopped
- 1/2 red onion, chopped
- 1-2 celery stalks with leaves, diced
- 1 carrot, grated
- 2 tbsp vegan mayo
- 1 tbsp tamari or soy sauce
- 1-2 tsp capers
- 1/2 lemon, juiced
- 2 tbsp nutritional yeast, optional
- Salt, black pepper & fresh herbs
- Optional vegetables from fridge
Preparation
Drain and rinse the chickpeas
In a bowl, combine all ingredients and mix well
Serve as a sandwich or directly from the bowl
Tips
Save the chickpea water for other recipes like chocolate cake
Adjust seasonings and add any extra vegetables to taste
