Vegan Chickpea Tuna Salad

Ingredients

  • 1 tin of chickpeas
  • 1/2 red pepper, chopped
  • 1/2 red onion, chopped
  • 1-2 celery stalks with leaves, diced
  • 1 carrot, grated
  • 2 tbsp vegan mayo
  • 1 tbsp tamari or soy sauce
  • 1-2 tsp capers
  • 1/2 lemon, juiced
  • 2 tbsp nutritional yeast, optional
  • Salt, black pepper & fresh herbs
  • Optional vegetables from fridge

Preparation

  1. Drain and rinse the chickpeas

  2. In a bowl, combine all ingredients and mix well

  3. Serve as a sandwich or directly from the bowl

Tips

  1. Save the chickpea water for other recipes like chocolate cake

  2. Adjust seasonings and add any extra vegetables to taste
