Flavorful Quinoa Salad Recipe
Ingredients
- quinoa - 1 cup uncooked
- bell pepper - any color of your choice
- 1 cup
- cherry tomatoes - i pint ( colorful ones)
- cucumber - diced up ( 1 cup )
- chickpeas - roasted
- basil, mint leaves , fresh parsley , coriander leaves all chopped coarsely ( 1/2 cup )
- for dressing
- extra virgin oil - 1/3 cup
- maple syrup - 1/2 tsp
- lemon juice - 1/4 cup
- dried fruits - of your own choice - 1/2 cup
- freshly ground pepper- 1/4 tsp
- salt according to taste
- avocado oil - 1/3 cup
Preparation
METHOD ✒ Cook quinoa as per package instructions. Move from the heat and cover for more 5 minutes . Uncover and then fluff the quino with a fork . Set aside to cool
In a large bowl add all the ingredients, quinoa, chickpeas, cucumber, capsicums , nuts , and herbs mix all together. ✒ In a small bowl , whisk olive oil ,lemon , maple syrup, salt and pepper and mix well
Pour the dressing over the salad and toss well . Adjust salt and pepper according to your liking . ▪
