Flavorful Quinoa Salad Recipe

Ingredients

  • quinoa - 1 cup uncooked
  • bell pepper - any color of your choice
  • 1 cup
  • cherry tomatoes - i pint ( colorful ones)
  • cucumber - diced up ( 1 cup )
  • chickpeas - roasted
  • basil, mint leaves , fresh parsley , coriander leaves all chopped coarsely ( 1/2 cup )
  • for dressing
  • extra virgin oil - 1/3 cup
  • maple syrup - 1/2 tsp
  • lemon juice - 1/4 cup
  • dried fruits - of your own choice - 1/2 cup
  • freshly ground pepper- 1/4 tsp
  • salt according to taste
  • avocado oil - 1/3 cup

Preparation

  1. METHOD ✒ Cook quinoa as per package instructions. Move from the heat and cover for more 5 minutes . Uncover and then fluff the quino with a fork . Set aside to cool

  2. In a large bowl add all the ingredients, quinoa, chickpeas, cucumber, capsicums , nuts , and herbs mix all together. ✒ In a small bowl , whisk olive oil ,lemon , maple syrup, salt and pepper and mix well

  3. Pour the dressing over the salad and toss well . Adjust salt and pepper according to your liking . ▪
