Oil-Free Quinoa Tabouli Bowls

Ingredients

  • 3 cups cooked quinoa
  • 1 bunch fresh parsley
  • 1/2 cup kalamata olives
  • 1 bunch cherry tomatoes
  • 1 large cucumber
  • Juice of 1 lemon
  • Black pepper

Preparation

  1. Put cooked quinoa in a large mixing bowl.

  2. Rinse parsley well and chop, then add to the bowl.

  3. Chop kalamata olives and add to the bowl.

  4. Wash and cut cherry tomatoes into quarters, then add to the bowl.

  5. Peel and seed cucumber, dice it, and add to the bowl.

  6. Add fresh lemon juice and toss all together well.

  7. Add black pepper to taste and enjoy.
