Healthy Quinoa Salad with Beans and Corn
Ingredients
- 1 cup of Quinoa
- 1 can of red kidney beans organic
- 1 cup of frozen corn
- 1 cucumber
- 1 cup of cherry tomatoes
- 1 red or green onion
- 1 juice of lime
- 1 tbsp of manuka honey
- Cilantro or parsley to garnish
- 2 Tbsp of Himalayan salt
- Black pepper to taste
Optional additions
- Feta
- mango
- pomegranate seeds
- avo
- pine nuts
- honey
Preparation
Add Quinoa to boiling pot of water so its like making rice. In a Bring quinoa and water to a boil. Cover, reduce heat to low, and simmer until for 15 minutes, or until quinoa is tender.
Remove from heat and let stand for 5 minutes, covered. Remove lid and fluff with a fork. Transfer quinoa to a large bowl.
Rinse the red kidney beans well and season it with salt and pepper.
Heat up the frozen corn in a pan with 1 tsp of grapeseed oil or grassfed butter and cover with lid for 3 to 4 mins.
Season the corn once its done.
Cut up everything to your liking & transfer to the quinoa bowl add all the other ingredients.
Mix well & taste if it needs more salt or pepper.
Make the dressing: Lime juice, 1 tbsp of manuka honey, mix well and pour over the bowl. Garnish with herbs. Enjoy
