Healthy Quinoa Salad with Beans and Corn

Ingredients

  • 1 cup of Quinoa
  • 1 can of red kidney beans organic
  • 1 cup of frozen corn
  • 1 cucumber
  • 1 cup of cherry tomatoes
  • 1 red or green onion
  • 1 juice of lime
  • 1 tbsp of manuka honey
  • Cilantro or parsley to garnish
  • 2 Tbsp of Himalayan salt
  • Black pepper to taste

Optional additions

  • Feta
  • mango
  • pomegranate seeds
  • avo
  • pine nuts
  • honey

Preparation

  1. Add Quinoa to boiling pot of water so its like making rice. In a Bring quinoa and water to a boil. Cover, reduce heat to low, and simmer until for 15 minutes, or until quinoa is tender.

  2. Remove from heat and let stand for 5 minutes, covered. Remove lid and fluff with a fork. Transfer quinoa to a large bowl.

  3. Rinse the red kidney beans well and season it with salt and pepper.

  4. Heat up the frozen corn in a pan with 1 tsp of grapeseed oil or grassfed butter and cover with lid for 3 to 4 mins.

  5. Season the corn once its done.

  6. Cut up everything to your liking & transfer to the quinoa bowl add all the other ingredients.

  7. Mix well & taste if it needs more salt or pepper.

  8. Make the dressing: Lime juice, 1 tbsp of manuka honey, mix well and pour over the bowl. Garnish with herbs. Enjoy
