Colorful Rainbow Salad with Hummus and Beans
Ingredients
- 150g rocket
- 1 red onion
- 400g cooked black beans
- 200g sweetcorn
- 1/2 a cucumber
- 3 generous scoops of my roasted red pepper hummus
- 1 tbsp pine nuts
- 3 tbsp olive oil
- 1/2 lemon, juiced
- Salt & pepper
Preparation
Slice the red onion into thin half moons and then squeeze over lemon juice and pinch lightly until they turn light pink (this is like a quick pickle, it reduces the intensity of the onion flavour)
Next split everything evenly between three bowls, dress each with 1 tbsp of oil and serve up
