Colorful Rainbow Salad with Hummus and Beans

Ingredients

  • 150g rocket
  • 1 red onion
  • 400g cooked black beans
  • 200g sweetcorn
  • 1/2 a cucumber
  • 3 generous scoops of my roasted red pepper hummus
  • 1 tbsp pine nuts
  • 3 tbsp olive oil
  • 1/2 lemon, juiced
  • Salt & pepper

Preparation

  1. Slice the red onion into thin half moons and then squeeze over lemon juice and pinch lightly until they turn light pink (this is like a quick pickle, it reduces the intensity of the onion flavour)

  2. Next split everything evenly between three bowls, dress each with 1 tbsp of oil and serve up
