Mediterranean Roasted Vegetables with Couscous
Ingredients
- 1 red pepper
- 1 yellow pepper
- 1 orange pepper
- 2 courgettes
- 1 red onion
- 200g rocket
- 150g wholegrain cous cous
- 1 stock cube
- 1 tbsp olive oil
- 1 tsp oregano
- Salt & pepper
Preparation
Preheat the oven to 190°C
Prepare all the vegetables, deseeding and cutting them into big bite-sized chunks. Pop in a roasting tin, add oil, oregano, salt and pepper, and smoosh around. Roast for 25-30 minutes.
Prepare the couscous according to package instructions, using the stock cube with the liquid.
Wash the rocket, lay everything out when it is ready, and tuck in
