Mediterranean Roasted Vegetables with Couscous

Ingredients

  • 1 red pepper
  • 1 yellow pepper
  • 1 orange pepper
  • 2 courgettes
  • 1 red onion
  • 200g rocket
  • 150g wholegrain cous cous
  • 1 stock cube
  • 1 tbsp olive oil
  • 1 tsp oregano
  • Salt & pepper

Preparation

  1. Preheat the oven to 190°C

  2. Prepare all the vegetables, deseeding and cutting them into big bite-sized chunks. Pop in a roasting tin, add oil, oregano, salt and pepper, and smoosh around. Roast for 25-30 minutes.

  3. Prepare the couscous according to package instructions, using the stock cube with the liquid.

  4. Wash the rocket, lay everything out when it is ready, and tuck in
