Vegan Plantain Salad with Tofu Feta and Garlic Beans

Ingredients

  • corn
  • plantains
  • greens
  • cucumber
  • red cabbage
  • mushrooms

Tofu feta

  • 1 block extra firm tofu
  • juice of half a lemon
  • 1/2 tsp dry garlic
  • 1/2 tsp dry onion
  • 1/4 tsp dry chives
  • 1 tsp miso paste
  • 1/4 to 1/2 tsp salt

Lemon garlic beans

  • 1 can white beans
  • juice of half a lemon
  • zest of half a lemon
  • 2 cloves garlic
  • 1 spring onion
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • black pepper

Preparation

  1. Combine all salad ingredients together. Feel free to add or remove ingredients as desired.

Tofu feta

  1. Add all ingredients except tofu to a small bowl and mix together.

  2. Spread the mixture over the tofu and mash with a fork until well mixed and crumbled.

  3. Ensure miso is evenly incorporated.

  4. Taste and adjust salt to preference.

  5. Refrigerate for at least one hour or overnight to allow flavors to meld.

Lemon garlic beans

  1. Add all ingredients to a bowl and toss to evenly mix.

  2. Refrigerate for at least one hour or overnight to allow flavors to meld.
