Sautéed Nopalitos and Cremini Mushrooms with Sauce

Ingredients

  • cooked nopalitos
  • cremini mushrooms
  • handful of cilantro
  • 1/2 red bell pepper
  • 1-2 shallots
  • jalapeño
  • 1 big tomato
  • 3-4 tablespoons tahini
  • salt to taste
  • pepper to taste
  • pinch of dry parsley
  • juice of one lime
  • 1 tablespoon nutritional yeast
  • water as needed

Preparation

  1. In a molcajete or mixing bowl, add cooked nopalitos and mushrooms along with favorite raw veggies such as cilantro, red bell pepper, shallots, jalapeño, and tomato.

  2. Make a simple creamy sauce by mixing 3-4 tablespoons tahini, salt and pepper to taste, a pinch of dry parsley, juice of one or more limes, 1 tablespoon nutritional yeast, and water to achieve desired thickness.

  3. Add some crunch and enjoy with tortilla chips, lettuce, or other preferences.
