Sautéed Nopalitos and Cremini Mushrooms with Sauce
Ingredients
- cooked nopalitos
- cremini mushrooms
- handful of cilantro
- 1/2 red bell pepper
- 1-2 shallots
- jalapeño
- 1 big tomato
- 3-4 tablespoons tahini
- salt to taste
- pepper to taste
- pinch of dry parsley
- juice of one lime
- 1 tablespoon nutritional yeast
- water as needed
Preparation
In a molcajete or mixing bowl, add cooked nopalitos and mushrooms along with favorite raw veggies such as cilantro, red bell pepper, shallots, jalapeño, and tomato.
Make a simple creamy sauce by mixing 3-4 tablespoons tahini, salt and pepper to taste, a pinch of dry parsley, juice of one or more limes, 1 tablespoon nutritional yeast, and water to achieve desired thickness.
Add some crunch and enjoy with tortilla chips, lettuce, or other preferences.
