Healthy Baked Falafel Burgers

Ingredients

  • 1 can chickpeas
  • 1/4 cup parsley
  • 1/4 cup cilantro
  • 2 tbsp mint
  • 1 small onion
  • 4 cloves garlic
  • 1/4 cup walnuts (optional)
  • 1/2 lemon, juiced
  • 3 tbsp chickpea flour or flour of choice
  • 1 tbsp olive or avocado oil
  • 1 tbsp cumin
  • 1 tsp coriander
  • 1 tsp crushed chili flakes
  • 1 tsp baking powder
  • A pinch of salt and pepper
  • 1/2 cup panko crumbs (optional)

Preparation

  1. Preheat oven to 375 degrees F

  2. Place all ingredients into a food processor and blend until you get a wet dough.

  3. Shape into burger patties and lightly press into panko crumbs.

  4. Place patties on a parchment lined baking sheet and bake in the oven at 375 degrees F for 25-35 minutes depending on the size of your patties, flipping at the halfway point.
