Healthy Baked Falafel Burgers
Ingredients
- 1 can chickpeas
- 1/4 cup parsley
- 1/4 cup cilantro
- 2 tbsp mint
- 1 small onion
- 4 cloves garlic
- 1/4 cup walnuts (optional)
- 1/2 lemon, juiced
- 3 tbsp chickpea flour or flour of choice
- 1 tbsp olive or avocado oil
- 1 tbsp cumin
- 1 tsp coriander
- 1 tsp crushed chili flakes
- 1 tsp baking powder
- A pinch of salt and pepper
- 1/2 cup panko crumbs (optional)
Preparation
Preheat oven to 375 degrees F
Place all ingredients into a food processor and blend until you get a wet dough.
Shape into burger patties and lightly press into panko crumbs.
Place patties on a parchment lined baking sheet and bake in the oven at 375 degrees F for 25-35 minutes depending on the size of your patties, flipping at the halfway point.
