Vegan French Toast

Ingredients

  • 1/2 block of medium or firm tofu
  • 3/4 cup non-dairy milk
  • 1/3 cup brown sugar
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp vanilla extract
  • 1/4 cup sesame seeds (i learnt this secret ingredient from my mama!❤️)
  • coconut oil or margarine for frying
  • 8 slices of bread

Preparation

  1. Blend together all of the batter ingredients until smooth, transfer to a large shallow bowl

  2. Stir in sesame seeds

  3. Lightly coat each piece of bread (one at a time) by dipping into batter and frying in a well greased pan over medium-low for about 2-3 mins per side

  4. Watch carefully to not let burnt OR bake in a preheated oven at 425 degrees F for 20 mins, flipping once
