Vegan French Toast with Flax Egg Mixture
Ingredients
- 1 tablespoon flaxseed meal
- 2.5 tablespoons water
- 0.5 cup unsweetened almond milk
- 2 tablespoons honey
- 1 teaspoon cinnamon
- 0.5 teaspoon nutmeg
- 0.5 teaspoon vanilla extract
- 2 pieces sourdough bread
- coconut oil or ghee for greasing
Preparation
Make flax egg by combining 1 tablespoon flaxseed meal and 2.5 tablespoons water; set in refrigerator for 5-10 minutes until egg-like texture.
While waiting, mix together 0.5 cup unsweetened almond milk, 2 tablespoons honey, 1 teaspoon cinnamon, 0.5 teaspoon nutmeg, and 0.5 teaspoon vanilla extract.
Add the flax egg to the mixture and stir until fully combined.
Soak 2 pieces of sourdough bread in the mixture.
Heat a pan over medium-high heat and grease with ghee or coconut oil.
Cook the bread in the pan, flipping until both sides are golden brown.
Optionally, top with vegan butter, elderberry syrup, and crushed pecans.
