Simple Vegan French Toast

Ingredients

  • 1 tablespoon flaxseed meal (grind your own; flax spoils quickly once ground)
  • 1 cup non-dairy milk
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 6 thickly cut slices of tougher bread

Preparation

  1. Mix all ingredients except bread in a bowl to make the batter.

  2. Let the mixture sit for a few minutes to thicken.

  3. Heat a skillet over medium heat and add oil if needed.

  4. Dip bread slices in the batter, coating both sides.

  5. Cook each slice until golden brown on both sides.

  6. Serve warm with desired toppings.
