Vegan Cinnamon Apple French Toast

Ingredients

  • 1 tablespoon flax seed meal
  • 2.5 tablespoons water
  • 4 slices bread of choice
  • 1 cup milk of choice
  • 2-3 teaspoons maple syrup
  • 1 teaspoon cinnamon
  • 1 teaspoon apple pie spice
  • 1/2 teaspoon vanilla
  • 2 apples
  • Coconut oil
  • Coconut sugar

Preparation

  1. Heat a skillet over medium heat.

  2. Make a flax egg by whisking together 1 tablespoon flax seed meal and 2.5 tablespoons water, then let it sit for 5 minutes.

  3. Mix the milk, maple syrup, cinnamon, apple pie spice, and vanilla together in a shallow bowl, then add the flax egg.

  4. Soak each piece of bread in the mixture.

  5. Cook the soaked bread in coconut oil for about 4 minutes on each side.

  6. Dice two apples.

  7. Add the diced apples to a skillet with coconut oil, sprinkle with cinnamon and coconut sugar, and cook until the apples are soft, about 5 minutes.
