Comforting Vegan Crepes with Cinnamon Apples

Ingredients

  • 1 dl (1/3 cup) plant-based milk (oat used)
  • 1 tbsp oil
  • 1 tbsp maple syrup
  • 1/2 tsp cinnamon
  • Pinch of salt
  • 2 dl (3/4 cup) flour
  • 1.5 dl (1/2 cup) sparkling water

Filling

  • Plant-based whipping cream

Cinnamon apples

  • 2 apples
  • 1 tsp vegan butter
  • 1/2 tsp cinnamon
  • 1 tbsp brown sugar
  • 2 tbsp water
  • pinch of salt

Preparation

  1. Mix together flour, maple syrup, cinnamon, salt, oil and milk, then mix in the sparkling water. Let it set for about 5 minutes.

  2. Heat up your pan and lightly coat with oil. Cook the crepes one at a time.

  3. For the apples: Chop apples with peels into small pieces. Cook in a hot pan with vegan butter for a second, then add cinnamon, sugar, water, and salt. Cook on low heat until apples are soft.
