Vegan Cinnamon Sugar French Toast Bake
Ingredients
- 1/3 cup flaxseed meal
- 1 1/2 cup non dairy milk
- 1 mashed banana
- 2 tbsp coconut sugar
- 1 tsp cinnamon
- 1 tsp vanilla
- 1/4 cup coconut sugar
- 1 tbsp melted coconut oil
- 1 tsp cinnamon
Preparation
Mix everything together then put in the fridge for 20 minutes
Cut about 6 slices of sourdough (6-7 cups) into cubes
Soak the cubes in the mixture after the 20 minutes is up
Add to a greased cast iron skillet or casserole dish
Then add your cinnamon-sugar topping
Cup coconut sugar
Tbsp melted coconut oil
Tsp cinnamon
All mixed together before sprinkling on top
Bake for 30-35 minutes! Serve with some maple syrup or even eat plain
