Vegan Cinnamon Sugar French Toast Bake

Ingredients

  • 1/3 cup flaxseed meal
  • 1 1/2 cup non dairy milk
  • 1 mashed banana
  • 2 tbsp coconut sugar
  • 1 tsp cinnamon
  • 1 tsp vanilla
  • 1/4 cup coconut sugar
  • 1 tbsp melted coconut oil
  • 1 tsp cinnamon

Preparation

  1. Mix everything together then put in the fridge for 20 minutes

  2. Cut about 6 slices of sourdough (6-7 cups) into cubes

  3. Soak the cubes in the mixture after the 20 minutes is up

  4. Add to a greased cast iron skillet or casserole dish

  5. Then add your cinnamon-sugar topping

  6. Cup coconut sugar

  7. Tbsp melted coconut oil

  8. Tsp cinnamon

  9. All mixed together before sprinkling on top

  10. Bake for 30-35 minutes! Serve with some maple syrup or even eat plain
