Vegan Grilled Cheese with Caramelized Onions

Ingredients

  • 4 slices of sourdough
  • 4 slices of your favorite vegan cheese
  • Fresh figs, sliced
  • About 1 tbsp vegan mayonnaise (or vegan butter)

Caramelized onions

  • 1 large sweet onion, thinly sliced
  • 1 tbsp vegan butter
  • Pinch of salt
  • 1 cup apple cider or juice

Preparation

  1. Sauté sliced onions with vegan butter and salt over low heat for 8 to 10 minutes.

  2. Add 1/2 cup of liquid (cider or juice) to the pan, stirring occasionally.

  3. When the liquid is mostly gone, add the remaining half cup of cider or juice.

  4. Continue sautéing until onions are rich in color, caramelized, and delicious.

  5. Spread vegan mayonnaise or butter on one side of the sourdough slices.

  6. Place one slice buttered side down in a heated pan or grill pan, layer with cheese, caramelized onions, sliced figs, another piece of cheese, and top with the second slice of sourdough buttered side up.

  7. Grill from both sides until bread is golden brown and cheese has melted.

Tips

  1. The perfectly caramelized onions take at least 20 minutes. Don’t rush this step, don’t stir them around too much, and use low heat to avoid burning.
