Carrot Ginger Salad Dressing

Ingredients

  • 1/4 cup rice vinegar
  • 1/4 cup water
  • 3 tbsp avocado or grape seed oil
  • 1/2 tbsp toasted sesame oil
  • 1 large carrot, chopped
  • 1 large thumb sized piece of ginger, peeled
  • 1 tbsp red onion
  • 1 tbsp miso paste
  • 3-4 drops of sweet.monk monk fruit extract or 1 tbsp sugar of choice
  • Pinch of salt and pepper

Preparation

  1. Blend all ingredients until smooth in a high-speed blender.

  2. Store refrigerated in an airtight container for up to 4 days.
