Creamy Vegan Pasta Bowl with Sauce

Ingredients

  • 2 small potatoes (peeled and cubed)
  • 1 small white onion (roughly chopped)
  • 1 tablespoon lemon juice
  • 2 tablespoons nutritional yeast
  • 1 1/3 cup oat milk
  • 350ml vegan bolognese
  • 500g pasta

Preparation

  1. Bring a small saucepan with water to a boil.

  2. Add the cubed potatoes and the chopped onion.

  3. Cook them for about 5-6 minutes or until the potato cubes are soft.

  4. Drain the water and add the veggies to a blender along with all the other ingredients.

  5. Blend until smooth and transfer the sauce back to the saucepan.

  6. Bring it to a boil for just a second and mix in any tomato sauce you like.

  7. Mix the cream sauce with 350ml of vegan bolognese which is the perfect amount for 500g of pasta.
