Creamy Vegan Pasta Bowl with Sauce
Ingredients
- 2 small potatoes (peeled and cubed)
- 1 small white onion (roughly chopped)
- 1 tablespoon lemon juice
- 2 tablespoons nutritional yeast
- 1 1/3 cup oat milk
- 350ml vegan bolognese
- 500g pasta
Preparation
Bring a small saucepan with water to a boil.
Add the cubed potatoes and the chopped onion.
Cook them for about 5-6 minutes or until the potato cubes are soft.
Drain the water and add the veggies to a blender along with all the other ingredients.
Blend until smooth and transfer the sauce back to the saucepan.
Bring it to a boil for just a second and mix in any tomato sauce you like.
Mix the cream sauce with 350ml of vegan bolognese which is the perfect amount for 500g of pasta.
