Focaccia Sandwiches with Salmon and Goat Cheese
Ingredients
- 600g type 00 flour
- 420ml cold water
- 8g fresh yeast
- 15g salt
- 25g extra virgin olive oil
Fillings
- smoked salmon
- cherry tomatoes
- arugula
- goat cheese
Preparation
Put the flour, yeast, and water gradually into a bowl and begin kneading.
Add salt and olive oil, and once the dough is smooth, let it rise covered for 2-3 hours.
Spread the dough in an oiled baking tray, let it rise again for about 2 hours, then bake at the bottom of the oven at 230 degrees Celsius (static) for 15 minutes, and then for 10 minutes in the middle.
Cut the focaccia into triangles.
Fill with goat cheese, arugula, smoked salmon, and cherry tomatoes.
