Tuna Bruschetta on Baguette Slices

Ingredients

  • 1 loaf baguette
  • 1 can tuna
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 clove garlic, crushed
  • 2 tablespoons mayonnaise
  • 1/2 medium red bell pepper, diced
  • 1 large tomato, diced
  • 1 green onion, chopped
  • 1 cup arugula, chopped

Preparation

  1. Cut the bread into diagonal slices using a knife.

  2. In a deep bowl, combine the tuna, lemon juice, salt, black pepper, crushed garlic, and mayonnaise; mix well with a fork.

  3. Spread a little of the mixture onto each bread slice, then top with diced red bell pepper, tomato, green onion, and arugula.

  4. Refrigerate the tuna bruschetta for a few minutes and serve immediately.
