Indonesian Spicy Mackerel Soup

Ingredients

  • 1 whole mackerel fish (approximately 1-1.5 kg)
  • 2 cucumbers

Ground spice paste

  • 10 shallots
  • 1/2 piece galangal
  • 1 piece turmeric
  • 2 stalks lemongrass
  • 12 curly red chilies
  • 6 red bird's eye chilies
  • 3 candlenuts
  • 1 teaspoon grilled shrimp paste

Additional seasonings

  • 5 kaffir lime leaves
  • Salt to taste
  • Sugar to taste
  • Mushroom seasoning to taste
  • Water as needed

Preparation

  1. Clean the mackerel, rub it with lime juice, let it sit for 15 minutes, then rinse well.

  2. Bring water to a boil, then add the ground spice paste and kaffir lime leaves.

  3. Cook until the mixture boils again and the spices release their aroma.

  4. Add the prepared mackerel, salt, sugar, and mushroom seasoning.

  5. Cook until the fish is half-done, then add the cucumbers.

  6. Cook briefly until the soup boils again, adjust seasoning to taste, then remove from heat and serve.
