Spicy Sour Mackerel Fish

Ingredients

  • 500 g mackerel fish
  • Oil for sautéing
  • 1 tablespoon tamarind pulp dissolved in water (discard solids)
  • Salt to taste
  • Sugar to taste
  • Mushroom seasoning to taste
  • Water as needed

Ground spices

  • 10 shallots
  • 3 cloves garlic
  • 2 cm galangal
  • 3 cm turmeric
  • White part of 1 lemongrass stalk
  • 10 curly red chilies
  • 3 candlenuts
  • 1 tablespoon shrimp paste

Additional spices

  • 5 kaffir lime leaves
  • 2 bay leaves

Preparation

  1. Clean and cut the mackerel fish into pieces, rub with lime juice and salt, let sit for 15 minutes, then rinse clean.

  2. Sauté the ground spices briefly, then add bay leaves and kaffir lime leaves, and stir until fragrant.

  3. Add water to cover the fish, pour in the tamarind water, add salt, sugar, and mushroom seasoning to taste, and bring to a boil.

  4. Add the fish and stir well, then cook until the fish is done.

  5. Taste and adjust seasoning until it is sour, sweet, and spicy, then remove from heat and serve.
