Indonesian Village Chicken Opor
Ingredients
- 1 whole village chicken
- 3 bay leaves
- 2 lemongrass stalks
- 2 cm galangal
- 2 teaspoons salt
- 1 teaspoon sugar
- 1 teaspoon chicken stock powder
- 1250 ml water
- 200 ml instant thick coconut milk
- 3 tablespoons vegetable oil
Spice paste
- 9 shallots
- 7 cloves garlic
- 7 candlenuts
- 2 cm ginger
- 3 cm turmeric
- 1 cm lesser galangal
- 2 kaffir lime leaves
- 1/2 teaspoon black peppercorns
Preparation
Heat the oil, sauté the spice paste until fragrant, add the chicken, stir well, cook until the color changes.
Add water, add bay leaves, lemongrass, and galangal, cook until chicken is tender. Season with salt, sugar, and chicken stock powder. Add more water if needed.
Add thick coconut milk, cook until boiling and thickened. Serve the chicken opor with fried shallot sprinkles.
