Spicy Indonesian Grilled Chicken

Ingredients

  • 1 kg chicken, cut into pieces
  • 3 bay leaves
  • 2 lemongrass stalks, smashed
  • 4 cm galangal, smashed
  • Water as needed
  • 3-4 tablespoons sweet soy sauce
  • Salt to taste
  • Sugar to taste

Spice paste

  • 20 curly red chilies
  • 10 shallots
  • 5 garlic cloves
  • 3 candlenuts
  • 2 cm ginger
  • 1/2 teaspoon turmeric powder

Accompaniments

  • White rice
  • Fresh vegetables

Preparation

  1. Wash the chicken and cut it into desired pieces.

  2. Sauté the spice paste until fragrant, then add bay leaves, lemongrass, and galangal, and sauté until the spices are cooked.

  3. Add the chicken and enough water to submerge it, then add salt, sugar, and sweet soy sauce. Mix well and check the taste.

  4. Cook the chicken until done; if it's not cooked, add more water. Continue cooking until the water reduces and the spices turn dark red.

  5. Remove the chicken and grill it, turning occasionally. Baste with the remaining sauce while grilling.

Serving suggestions

  1. After grilling, add the remaining sauce on top of the chicken.

  2. Serve with white rice and fresh vegetables.
