Traditional Indonesian Grilled Chicken

Ingredients

  • 1 whole chicken, cut to preference
  • 500ml coconut water or water
  • 50g palm sugar
  • 50g granulated sugar
  • 3 tablespoons sweet soy sauce
  • Salt to taste
  • A thumb-sized piece of galangal
  • 4 bay leaves
  • Margarine, as needed

Ground spices

  • 10 shallots
  • 6 cloves garlic
  • 3 candlenuts
  • A thumb-sized piece of turmeric
  • 1 tablespoon coriander

Preparation

  1. Wash the chicken thoroughly.

  2. Grind the ground spices into a paste.

  3. Add all the seasonings to the chicken.

  4. Simmer on low heat until cooked.

  5. Remove and let it cool.

  6. Grill briefly while basting with margarine and sweet soy sauce.
