Traditional Indonesian Grilled Chicken
Ingredients
- 1 whole chicken, cut to preference
- 500ml coconut water or water
- 50g palm sugar
- 50g granulated sugar
- 3 tablespoons sweet soy sauce
- Salt to taste
- A thumb-sized piece of galangal
- 4 bay leaves
- Margarine, as needed
Ground spices
- 10 shallots
- 6 cloves garlic
- 3 candlenuts
- A thumb-sized piece of turmeric
- 1 tablespoon coriander
Preparation
Wash the chicken thoroughly.
Grind the ground spices into a paste.
Add all the seasonings to the chicken.
Simmer on low heat until cooked.
Remove and let it cool.
Grill briefly while basting with margarine and sweet soy sauce.
