Steamed Glutinous Rice with Crab and Cured Meats
Ingredients
- 1 dried lotus leaf
- 1 large or 2 small crabs
- 2 cups glutinous rice
- 1 sausage
- 4 dried shiitake mushrooms
- 4 dried scallops
- 30g dried shrimp
- 1 dried cuttlefish
- Chopped spring onions to taste
Seasoning
- 2 tablespoons light soy sauce
- 1 teaspoon dark soy sauce
- 1 teaspoon sugar
Preparation
Soak the glutinous rice for 2 hours and drain.
Soak the dried scallops, cuttlefish, dried shrimp, and dried shiitake mushrooms until soft, then chop them along with the sausage.
Blanch the lotus leaf in salted water until soft, dry it, and lay it in the steamer.
Prepare the crab by removing the stomach and gills, cracking the claws, and setting aside the crab roe.
Heat oil in a pan, add the chopped seafood, and sauté for 5 minutes.
Add the drained rice and seasoning, then stir-fry until well mixed.
Place the rice mixture on the lotus leaf in the steamer, cover with the leaf, and steam on high heat for 45 minutes.
Add the crab pieces and steam for another 12-15 minutes.
Sprinkle with chopped spring onions and serve.
Tips
Use dried lotus leaf for better flavor and easier availability.
You can substitute other types of crab if preferred.
Place the crab cover upside down during steaming to avoid excess moisture.
For a lighter dish, use half glutinous rice and half regular rice.
Dried lotus leaf can be purchased in herbal shops or markets for about $2 each.
