Chia Beet Parfait

Ingredients

  • for the bottom layer
  • 5 frozen bananas
  • 1 thumb size piece of beetroot
  • for the middle layer
  • 3/4 cup of plain nondairy yogurt
  • for the top layer
  • 3/4 cup of non dairy milk mixed with a thumb size piece of beetroot
  • 1/2 cup of non dairy yogurt
  • 3 tbs of maple syrup
  • 1/2 cup of chia seeds
  • 1 handful of freeze dried raspberries

Preparation

  1. Combine all ingredients for top layer into a large bowl

  2. Mix well and set aside

  3. Combine all ingredients for bottom layer into a blender and blend until smooth

  4. Pour bottom layer into glassware of choice and add yogurt

  5. Add chia into glassware and garnish with freeze dried berries

  6. Serve and enjoy!
