Mango Chia Pudding
Ingredients
- 1 bag frozen mango, about 1 lb
- 1/4 cup chia seeds
- 3/4 cup plant milk**
- 1/4 cup plant based yogurt, or more plant milk
- 1-2 Tbsp maple syrup
Preparation
Take mango from the freezer and thaw overnight
Whisk all remaining ingredients together in a medium bowl and let set overnight
In the morning puree thawed mango and divide between 4 small jars. Add chia pudding on top. Serve immediately, or chill until you’re ready to make 4 people happy
