Pumpkin Pie Spiced Oats

Ingredients

  • 1/4 cup steel cut oats (soaked overnight and then rinsed and drained before using)
  • 1 tbsp ground flax seed (feel free to just use a tsp or none of not a fan)
  • 1/2 tsp vanilla extract
  • 1/2 tsp pumpkin pie spice
  • Pinch of salt
  • 1 mashed banana
  • 1 cup almond milk

Preparation

  1. Add all contents to a sauce pan, stir together and bring to a simmer

  2. Allow to thicken for about 5-8 minutes, stirring occasionally to prevent oats from sticking to the bottom of the pan

  3. Go for the fruit you enjoy! I went with frozen raspberries, blueberries, mulberries and pomegranate seeds
