Cardamom Zucchini Oats (Zoats)
Ingredients
- 1/2 cup rolled oats (I’ve been chopping my oats up in a mini food processor before cooking them...pretty much making my own quick oats which makes them much creamier)
- 1/3 grated zucchini
- 1 tbsp ground flax seed
- 1/2 tsp cinnamon
- Pinch of ground cardamom
- 1 cup almond milk
- Pinch of salt
- 1 banana, mashed or sliced
Preparation
Add all ingredients to a sauce pan and then bring to a simmer
Stir and cook for about 3 minutes until it’s creamy and remove from stove top
Top as desired
I chose to top my oats with banana, peanut butter, blackberries, blueberries and cocoa nibs
