Cardamom Zucchini Oats (Zoats)

Ingredients

  • 1/2 cup rolled oats (I’ve been chopping my oats up in a mini food processor before cooking them...pretty much making my own quick oats which makes them much creamier)
  • 1/3 grated zucchini
  • 1 tbsp ground flax seed
  • 1/2 tsp cinnamon
  • Pinch of ground cardamom
  • 1 cup almond milk
  • Pinch of salt
  • 1 banana, mashed or sliced

Preparation

  1. Add all ingredients to a sauce pan and then bring to a simmer

  2. Stir and cook for about 3 minutes until it’s creamy and remove from stove top

  3. Top as desired

  4. I chose to top my oats with banana, peanut butter, blackberries, blueberries and cocoa nibs
