Arabian Spiced Lamb Stew

Ingredients

  • 1 kg lamb meat, cut into small cubes
  • 3 tablespoons flour
  • 2 tablespoons ghee
  • 3 large onions, coarsely chopped
  • 6 cloves garlic, sliced
  • 2 green bell peppers, halved
  • 1 teaspoon mixed spices
  • 1 teaspoon salt
  • 1 teaspoon cumin
  • 1 teaspoon crushed hot pepper
  • 1 teaspoon ground coriander
  • 1/2 teaspoon black pepper
  • 3-4 large tomatoes, peeled and chopped
  • 2 tablespoons tomato paste
  • 1-2 cups water

For serving

  • Chopped fresh coriander

Preparation

  1. On high heat, place the special pan for cooking the dish and let it heat completely. Add the ghee and let it melt. You can use a thick-based pan if you don't have the special one.

  2. Sprinkle the flour on the lamb cubes. Place the lamb in the hot pan. Using a wide metal spoon, stir the lamb until its water evaporates, color turns golden, and it browns.

  3. Add the onion, garlic, green peppers, mixed spices, salt, cumin, crushed hot pepper, ground coriander, and black pepper. Stir the lamb with onion and garlic until the aroma of garlic and spices rises.

  4. Add the tomatoes, tomato paste, and water. Stir until the sauce forms and starts boiling. Let it cook on the fire for 20 to 30 minutes until the meat is fully cooked.

  5. Serve hot with white rice or Iranian bread.
