Balinese Beef Rendang Stew

Ingredients

  • 1 kg beef with tendons and some fat
  • 5 small red shallots
  • 2 large red shallots
  • 20 bird's eye chilies
  • 5 cloves garlic
  • 2 teaspoons coriander seeds, roasted and ground fine
  • 2 teaspoons cumin seeds (jintan manis), roasted and ground fine
  • 2 teaspoons white cumin or caraway seeds (jintan putih), roasted and ground fine
  • 3 teaspoons black pepper, roasted and ground fine
  • ginger and galangal (quantities not specified)
  • 3 stalks lemongrass
  • 4 sekawan spices (assorted spices, quantities as indicated)
  • candlenuts or buah keras
  • bay leaves, kaffir lime leaves, and turmeric leaves (quantities not specified)
  • toasted grated coconut (kerisik, optional)
  • coconut milk (santan)
  • salt, sugar, and seasoning (to taste)

Preparation

  1. Sauté all the ingredients together

  2. Add water and meat, then let it boil

  3. When the mixture is somewhat dry, add thick coconut milk and simmer

  4. Add kerisik if using

  5. Sprinkle with chopped turmeric leaves

Tips

  1. Kerisik is optional and adds extra flavor to the dish
