Cozy High-Protein Veggie Chili

Ingredients

  • 2 sweet yellow onions
  • 1.5 red bell peppers
  • 2 yellow squashes
  • 1/2 can fire roasted diced tomatoes
  • 1 can green chilis
  • Juice of 1 lemon
  • 1 frozen garlic cube
  • 3-4 cups chicken broth
  • 2 tablespoons simple truth taco simmer sauce
  • 6 ounces extra lean 99% ground turkey
  • Cumin to taste
  • Pink salt to taste
  • Pepper to taste
  • Chili powder to taste

Preparation

  1. Air fry the yellow squash at 400 degrees Fahrenheit for 16 minutes until crispy.

  2. Cook the ground turkey until done.

  3. In a large pot, spray with coconut oil spray and add the garlic cube and chopped sweet yellow onions.

  4. Brown the onions with the taco simmer sauce; if they stick, add a splash of chicken broth to make them translucent and soft.

  5. Once the onions are sautéed, add the fire roasted diced tomatoes, green chilis, lemon juice, and spices to taste.

  6. Add the red bell peppers, chicken broth, cooked ground turkey, and air-fried yellow squash.

  7. Bring the mixture to a boil and then simmer for 1-2 hours to let the flavors combine.
