Lamb and Green Bean Stew

Ingredients

  • 1 kg lamb with bone, cut
  • 1 kg broad green beans
  • 8 tablespoons tomato paste
  • 4 cloves garlic, crushed
  • 2 tablespoons chopped green coriander
  • 2 tablespoons oil

For boiling meat

  • 1 large onion, cut into quarters
  • 2 bay leaves
  • 1 cinnamon stick
  • 6 cardamom pods
  • 1 tablespoon salt

Preparation

  1. In a medium-sized pot, place the meat and cover it with water. Put it on high heat to start boiling.

  2. Remove the foam, add the spices and salt, and leave it on low heat until the meat is tender.

  3. Strain the broth, add the green beans, and leave it to boil until the beans are cooked.

  4. Add the tomato paste and the meat, and leave it to simmer.

  5. In a small skillet, heat the oil, add the garlic and stir until it wilts, then add the coriander, stir until fragrant, and add it to the stew.

  6. Serve with rice.
