Refreshing Summer Gazpacho with Fresh Vegetables

Ingredients

  • 1 1/4 kg ripe tomatoes
  • 1/2 small white onion
  • 1 small cucumber
  • 1 small green pepper
  • 1/4 cup extra virgin olive oil
  • 1 tsp sherry vinegar
  • Pinch of salt and pepper

Preparation

  1. Add everything to a blender and blend until smooth.

  2. Leave it in the fridge for a few hours to chill and let the flavours develop.

  3. Add toppings of your choice, such as grilled corn, basil, chopped cherry tomatoes, extra virgin olive oil, and a pinch of cashew parmesan.

  4. Enjoy!
