Refreshing Summer Gazpacho with Fresh Vegetables
Ingredients
- 1 1/4 kg ripe tomatoes
- 1/2 small white onion
- 1 small cucumber
- 1 small green pepper
- 1/4 cup extra virgin olive oil
- 1 tsp sherry vinegar
- Pinch of salt and pepper
Preparation
Add everything to a blender and blend until smooth.
Leave it in the fridge for a few hours to chill and let the flavours develop.
Add toppings of your choice, such as grilled corn, basil, chopped cherry tomatoes, extra virgin olive oil, and a pinch of cashew parmesan.
