Creamy Cheesy Jackfruit Taquitos with Spicy Flavor

Ingredients

  • 12 medium tortillas
  • 1 tbsp avocado oil
  • 2-14oz cans jackfruit
  • 1/2 small yellow onion
  • 1/2 jalapeño
  • 3 garlic cloves
  • 1 1/2 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/4 tsp oregano
  • 8 oz cream cheese
  • 1/2 cup salsa

Preparation

  1. Adjust the heat by adding more or less jalapeño based on preference.

  2. Heat 1 tbsp avocado oil over medium heat and cook onions, jalapeños, and garlic until softened.

  3. Stir in jackfruit, chili powder, cumin, paprika, oregano, cream cheese, and salsa until well mixed.

  4. Remove from heat.

  5. Assemble taquitos by adding some filling to each tortilla and roll them up tightly.

  6. Heat 1 tbsp avocado oil in a large skillet and cook taquitos until golden brown, rotating as needed.

  7. These make 12 taquitos; only assemble the amount you plan to eat immediately for best freshness.

  8. Taquitos are best when crispier, so ensure they are cooked accordingly.

  9. Optionally, drizzle with homemade queso cheese and fresh cilantro on top for serving.
