Quick and Easy Loaded Chicken Burritos

Ingredients

  • Large tortilla shells
  • Spicy mayo (mayo mixed with hot sauce)
  • Cooked rice
  • 1 cup Rotisserie chicken
  • 1/2 cup salsa
  • 1/2 cup black beans
  • Spinach or lettuce
  • Grilled corn
  • Diced tomato, red onion, green onion
  • 1/2 avocado
  • Shredded cheese

Preparation

  1. Add chicken to a frying pan with salsa and beans, mix and cook for 5 minutes until the flavors come together

  2. Chop your veggies

  3. Shred cheese

  4. Assemble burrito with sauce, chicken mixture, cheese, greens, veggies, avocado and roll tightly

  5. Pan fry for a couple of minutes until crispy

  6. Cut in half and enjoy
