Vegan Mushroom Tacos with Salsa Verde
Ingredients
Marinade
- 1/2 cup orange juice
- 6 tablespoons soy sauce
- 1 teaspoon chili paste
- a handful chopped cilantro
- 2 teaspoons cumin
- 2 teaspoons oregano
- juice of 2 limes
- 1/4 cup olive oil
- 450g mushrooms (king oyster mushrooms)
Salsa verde
- a bunch cilantro or parsley
- 2 cloves garlic
- 4 tablespoons vegan yogurt
- 4 tablespoons vegan mayo
- juice of 1/2 lemon
- 1 teaspoon cumin
- 1 teaspoon agave
- salt to taste
Preparation
Marinate the mushrooms in the mixture for at least 30 minutes.
Blend the salsa verde ingredients until smooth.
Cook the marinated mushrooms until tender.
Serve in soft taco shells with the salsa verde.
