Spiced Tadka for Bottle Gourd Raita

Ingredients

  • mustard seeds
  • peppercorns
  • cumin
  • mustard oil
  • a pinch of salt
  • a touch of jaggery
  • asafoetida
  • a sprinkle of sesame seeds
  • fresh chillies
  • curry leaves
  • a hint of turmeric
  • red chilli powder

Preparation

  1. Heat mustard oil in a pan and add mustard seeds, peppercorns, and cumin; let them sizzle until aromatic.

  2. Add a pinch of salt, a touch of jaggery, and asafoetida.

  3. Stir in a sprinkle of sesame seeds, fresh chillies, and curry leaves.

  5. Pour the tadka over cold bottle gourd raita and serve.
