Spiced Tadka for Bottle Gourd Raita
Ingredients
- mustard seeds
- peppercorns
- cumin
- mustard oil
- a pinch of salt
- a touch of jaggery
- asafoetida

Preparation
Heat mustard oil in a pan and add mustard seeds, peppercorns, and cumin; let them sizzle until aromatic.

Stir in a sprinkle of sesame seeds, fresh chillies, and curry leaves.
Add a hint of turmeric and red chilli powder for color and flavor.
Pour the tadka over cold bottle gourd raita and serve.
