Easy Vegan Tofu Nuggets

Ingredients

  • 400g pack of tofu (including water)
  • 1 tsp salt
  • 1 tsp pepper
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/4 cup plain flour
  • 1/4 cup soya milk
  • 1 tbsp sweet chilli sauce
  • 3 cups vegan cornflakes

Preparation

  1. This recipe makes 18 tofu nuggets.

  2. Drain and press the tofu for 15-20 minutes to remove excess water.

  3. Cut the tofu into nugget-shaped pieces.

  4. In a small bowl, mix together the salt, pepper, paprika, and garlic powder.

  5. Set up three separate bowls: one with the plain flour, one with a mixture of soya milk and sweet chilli sauce, and one with crushed vegan cornflakes.

  6. Coat each tofu piece first in the flour, then dip it in the soya milk mixture, and finally coat it with the crushed cornflakes.

  7. Place the coated nuggets on a baking tray and bake in a preheated oven at 200°C for 20-25 minutes or until golden and crispy, turning halfway through.
