Vegan Tofu Chickpea Chicken Nuggets
Ingredients
- 1 block firm tofu
- 1 can chickpeas with liquid
- 1 cooked potato
- 1 red onion
- 2 tbsp corn flour
- pinch of salt and pepper
- 1 tsp garlic powder
- 1/2 tsp paprika
- 1/2 tsp basil and oregano
- 1/2 cup breadcrumbs (use more if necessary)
Preparation
Combine all ingredients except breadcrumbs and blend until smooth, then mix with breadcrumbs until a firm or slightly sticky mixture comes together.
Pinch off some of the mix and shape into nuggets, then bake, air fry, or deep fry until crispy.
Notes
One method is to bake for 15 minutes, spray with oil, and finish in the air fryer.
