Super Silky Scrambled Tofu
Ingredients
- 1 x 280g block extra-firm tofu (thinly sliced)
- 130g silken tofu (with liquid)
- 60ml plant-based milk
- 2 tbsp plant-based butter
- 10g nooch
- 1 tsp cornflour
- 1/4 tsp turmeric
- Zest of 1 lemon
- Sea salt and black pepper
Serving
- 4 slices good-quality sourdough
- More plant-based butter
- 3 spring onions (sliced)
Preparation
Toast your sourdough and slice the spring onions.
Fry the sliced firm tofu in butter for 2 minutes.
Blend silken tofu, milk, nooch, cornflour, turmeric, lemon zest, salt and pepper until smooth.
Pour the silken mix into the pan with the tofu and stir gently over low heat until thickened and glossy.
Serve on hot buttered toast with spring onions and a crack of black pepper.
