Sweet and Spicy Saucy Noodles

Ingredients

  • 1 package of noodles (such as lo mein, rice noodles, or spaghetti)
  • 1 package of super firm tofu

Veggies

  • 1 large yellow onion, diced
  • 1-2 large bell peppers, thinly sliced
  • 2 cloves of garlic, minced
  • 2 large carrots, shredded or cut into matchsticks

Sauce

  • 1/4 cup tamari or low sodium soy sauce
  • 1/4 teaspoon ground ginger
  • 1 teaspoon garlic powder
  • 2 cloves of garlic, minced (optional)
  • 2 tablespoons maple syrup
  • 1 tablespoon sesame oil
  • 2 tablespoons rice wine vinegar
  • 1 tablespoon sriracha or 1 teaspoon gochujang
  • 1 tablespoon cornstarch whisked with 1.5 tablespoons water

Preparation

  1. Cook the noodles according to the package instructions and set aside.

  2. Cut the tofu into cubes, toss in some oil, and bake at 350 degrees Fahrenheit until browned, lining the baking pan with parchment paper.

  3. Sauté the onions in 1 tablespoon of sesame oil over medium heat for 5 minutes.

  4. Add the other vegetables and sauté for 5-10 minutes until they reach the desired consistency, then set aside.

  5. Mix together all of the sauce ingredients except the cornstarch slurry in a small saucepan over medium heat.

  6. Whisk the sauce often until it starts to gently bubble.

  7. Add the cornstarch slurry and whisk until the sauce thickens, then set aside.

  8. Combine the noodles, tofu, and vegetables, and toss to combine well.

  9. Stir in the sauce and mix until well incorporated.

  10. Enjoy!
