Vegan Feta Cheese Alternative Using Tofu

Ingredients

  • 60ml water
  • 60ml apple cider vinegar
  • 30ml lemon juice
  • 1/2 tsp miso paste (optional)
  • 1 tbsp nutritional yeast
  • 1/2 tsp salt (adjust to taste)
  • chopped green parts of spring onions
  • optional herbs like parsley or oregano
  • 120g firm tofu

Preparation

  1. Combine all the marinade ingredients in a bowl.

  2. Add the firm tofu to the marinade and let it marinate for at least overnight.

  3. Use the marinated tofu as a vegan feta cheese substitute in dishes like Greek salad, pasta, sandwiches, or eat it alone.
