Fresh Pineapple Salsa with Blackened Cod

Ingredients

  • 1/2 chopped avocado
  • 1/2 chopped bell pepper
  • diced jalapeño
  • 1 cup diced pineapple
  • 1/2 diced onion
  • juice of 1 lime
  • cod

Preparation

  1. Combine the avocado, bell pepper, jalapeño, pineapple, onion, and lime juice to make the salsa.

  2. Pat dry the cod and season it.

  3. Fry the cod on high heat with oil for 4 minutes per side.

  4. Serve the salsa over the cod.

  5. Optionally, serve on top of rice or cauliflower rice for a paleo option.
