Healthy Pumpkin Spice Donut Holes

Ingredients

  • 1 cup Birch Benders paleo pumpkin spice pancake & waffle mix
  • 1/4 cup almond butter
  • 1/4 cup pumpkin purée
  • 1/4 cup milk of choice

Coating

  • 2 tablespoons melted coconut oil or butter
  • 2 tablespoons sugar
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon pumpkin pie spice

Preparation

  1. Mix ingredients until a dough forms.

  2. Use a cookie scoop to form 12 balls and place them in a greased mini muffin pan or onto a parchment-lined baking sheet.

  3. Bake at 350 degrees for 12 to 14 minutes.

  4. Toss in 2 tablespoons melted coconut oil or butter.

  5. Roll each one in the sugar mixture.
