Easy Pesto Pasta for Busy Weeknights

Ingredients

  • 1 handful fresh basil
  • 1 handful fresh kale leaves
  • 3 whole fresh garlic cloves
  • 2 tsp nutritional yeast
  • 1/2 cup raw cashews
  • 1/2 ripe avocado
  • 1/2 tsp sea salt
  • 1/4 cup olive oil
  • juice of 1 large lemon
  • 1/4 cup water

Preparation

  1. Blend all the pesto ingredients together until smooth.

  2. Stir the blended pesto into your favorite cooked pasta.

  3. For best results, use a pasta like Banza chickpea pasta as recommended.
