Easy Pesto Pasta for Busy Weeknights
Ingredients
- 1 handful fresh basil
- 1 handful fresh kale leaves
- 3 whole fresh garlic cloves
- 2 tsp nutritional yeast
- 1/2 cup raw cashews
- 1/2 ripe avocado
- 1/2 tsp sea salt
- 1/4 cup olive oil
- juice of 1 large lemon
- 1/4 cup water
Preparation
Blend all the pesto ingredients together until smooth.
Stir the blended pesto into your favorite cooked pasta.
For best results, use a pasta like Banza chickpea pasta as recommended.
