Easy Vegan Hummus Spaghetti Lunch Dish

Ingredients

  • spaghetti
  • 1/3 cup tahini (sesame seed paste)
  • 2-4 tablespoons cold water, or more if needed
  • 2 tablespoons olive oil
  • 1/2 teaspoon ground cumin
  • 3/4 teaspoon salt
  • 2 medium cloves garlic, peeled and smashed
  • juice of 1 lemon (2-3 tablespoons)
  • 1.5 cups boiled chickpeas (rinsed and drained)

Preparation

  1. Add the hummus ingredients to a food processor or blender and blend until a creamy paste is formed.

  2. Boil the spaghetti according to package instructions until cooked.

  3. Mix the boiled spaghetti with the prepared hummus to complete the dish.
